On the far west reaches of the Yakima Valley, planted at 1200+ ft above the Missoula flood plain, are 2 iconic sites in Washington. From here we sourced 8 separate clones to complete this blend. Harvested at optimal ripeness, fermented at cool temperatures, the wine was pressed after 20 days, and aged in Oak barrels for 24 months to showcase the beauty and complexity of this noble variety. Intense wine purple to sangria hues illustrate the genetic predisposition of tiny berries packed with color. Blackberry Liqueur, black currant and tobacco leaf combine New World flavors from Red Willow, with herbaceous olive and white pepper notes from compacted clay soils at Slide Mountain. Subtle wood adds a touch of cedar and pencil to dark fruit, a focused mouthfeel, dusty tannins and a lingering finish for which Cabernet Sauvignon is famous. Anticipate this wine to open to an aromatic profile of fruit and herbs by 2020.
