The 2020 Procedo Rosé blend from Washington and Oregon was produced using the Saignée method. This practice comes from the French term which means “to bleed”, where a small amount of juice is bled off the skins after a short bit of contact (2-24 hours is typical) and fermented like a still wine; it’s our method of choice to balance elevated sugar levels in varietals like Zinfandel or Syrah.
Reddish brown hues of madder and carmine at the core, surrounded by turkey red at the rim thanks to a higher percentage of dark-skinned Syrah and Zinfandel. Red berry and Bing cherry aromas lift classic floral hints of fresh rose petal and a seductive spice. Juicy red fruits and an initial hint of sweetness upfront glides across the palate only to settle in for the finish. Lingering acidity makes this a fun summer wine to pair with hearty charcuterie and whimsical conversation, or simply bridge the gap between a cold beer and a bold Lady Hill Red Wine. This style of Rosé is built for early consumption, and with the popularity it has achieved in past vintages, pick up some while you can.
